Vegan Croquette Recipe: Nomet Croquette in a Bun

Comfort food made festive: a crispy croquette in a toasted bun with tangy herb mayo and pickles.

Cook time: 10 minutes
Servings: 4

Ingredients

  • 4 buns or bagels

  • 4 Nomet croquettes (oven, airfryer, or deepfryer)

  • 5 tbsp (vegan) mayo

  • 6 small pickles + 2 large pickles

  • 1 tbsp capers

  • 1 shallot

  • Fresh dill & tarragon

  • ½ lemon, juice

  • ½ tsp mustard

Instructions

  1. Fry/airfry croquettes until golden.

  2. Chop herbs, pickles, shallot, and capers. Mix with mayo, mustard, and lemon juice.

  3. Toast buns.

  4. Spread sauce, add big pickle slices, top with croquette.

Serving suggestion: A star at any lunch table.
