Courgette & Fennel Salad with Feta
Vegan festive Starter Recipe: Courgette & Fennel Salad with Nomet Croquettes
An elegant, easy salad to impress your guests — with ribbons of courgette, dill, sunflower seeds, and (vegan) feta.

Cook time: 5 minutes (for seeds)

Ingredients
1 courgette
½ fennel bulb
1 block (vegan) feta
4 tbsp sunflower seeds, toasted
3 sprigs dill
Dressing: juice of 1 lemon, 2 tbsp olive oil, salt, pepper
Instructions
Use a peeler to shave courgette & fennel into strips.
Toss with dressing and dill.
Crumble in feta.
Toast sunflower seeds and sprinkle over.
Serving suggestion: Pair with Nomet croquettes for a festive starter.
