Courgette & Fennel Salad with Feta

Courgette fennel feta salad to accompany Nomet seaweed croquettes

Vegan festive Starter Recipe: Courgette & Fennel Salad with Nomet Croquettes

An elegant, easy salad to impress your guests — with ribbons of courgette, dill, sunflower seeds, and (vegan) feta.

Prep time: 15 minutes
Cook time: 5 minutes (for seeds)
Servings: 4

Ingredients

  • 1 courgette

  • ½ fennel bulb

  • 1 block (vegan) feta

  • 4 tbsp sunflower seeds, toasted

  • 3 sprigs dill

  • Dressing: juice of 1 lemon, 2 tbsp olive oil, salt, pepper

Instructions

  1. Use a peeler to shave courgette & fennel into strips.

  2. Toss with dressing and dill.

  3. Crumble in feta.

  4. Toast sunflower seeds and sprinkle over.

Serving suggestion: Pair with Nomet croquettes for a festive starter.
