Vegan Snacks Recipe: Seaweed Courgette Patties

Golden, crispy patties made with beans, herbs, and seaweed. Easy, filling, and perfect as vegetarian snack or tucked into a bun.

Cook time: 15 minutes
Servings: 8 patties

Ingredients

  • 100 g chickpea flour (add more if too moist)

  • 1 courgette, grated

  • 10 g dried toasted nori

  • 15 g wakame or sea lettuce

  • 400 g butter beans

  • A big handful of dill & mint

Instructions

  1. Grate courgette and chop herbs.

  2. Mix everything with your hands until dough-like.

  3. Shape into patties.

  4. Fry in a splash of oil, 8 min per side.

Serving suggestion: Stack in buns or serve with salads for a hearty vegan snack.
