Easy Vegan Party Snack: Nomet Croquettes with Spring Salad

Meet your new favourite duo: crispy golden seaweed croquettes with a salad of vibrant greens, shaved fennel, toasted hazelnuts, and a tangy drizzle of lemon.
Perfect for lunch, a summer dinner, or even an impromptu picnic.

Ingredients

  • A bed of greens

  • 1 fennel bulb, thinly shaved

  • Handful of toasted hazelnuts, chopped

  • Olive oil

  • Vinegar or lemon juice

Instructions

  1. Layer greens on a plate.

  2. Shave fennel thinly and scatter on top.

  3. Sprinkle hazelnuts for crunch.

  4. Drizzle olive oil and vinegar or lemon juice.

  5. Serve alongside oven or airfyer Nomet croquettes.

Serving suggestion: Pack it up for a picnic, or serve at a sunny dinner table.
