Nori, Fennel & Grapefruit Salad with Maple Almonds
Vegetarian Salad Recipe: Nori, Fennel & Grapefruit Salad
Crisp fennel, sweet grapefruit, caramelised almonds, and nori for crunch. A fresh yet indulgent salad.

Cook time: 5 minutes (almonds)
Servings: 2–4
Ingredients
2 fennel bulbs, thinly sliced
1 grapefruit, sliced into wedges
Handful almonds
2 tbsp maple syrup
40 g dried salted nori
1 tbsp vinegar
Instructions
Toast almonds, glaze with maple syrup.
Slice fennel & grapefruit, save juice.
Mix with vinegar & season.
Top with nori & almonds.
Serving suggestion: Pairs beautifully with Nomet croquettes.
