Nori, Fennel & Grapefruit Salad with Maple Almonds

Vegetarian Salad Recipe: Nori, Fennel & Grapefruit Salad

Crisp fennel, sweet grapefruit, caramelised almonds, and nori for crunch. A fresh yet indulgent salad.

Prep time: 15 minutes
Cook time: 5 minutes (almonds)
Servings: 2–4

Ingredients

  • 2 fennel bulbs, thinly sliced

  • 1 grapefruit, sliced into wedges

  • Handful almonds

  • 2 tbsp maple syrup

  • 40 g dried salted nori

  • 1 tbsp vinegar

Instructions

  1. Toast almonds, glaze with maple syrup.

  2. Slice fennel & grapefruit, save juice.

  3. Mix with vinegar & season.

  4. Top with nori & almonds.

Serving suggestion: Pairs beautifully with Nomet croquettes.
