Hijiki Spaghetti with Lemon & Spinach
Vegan Pasta Recipe: Hijiki Spaghetti with Lemon & Spinach
Zesty, garlicky pasta with hijiki seaweed and spinach. Fresh, quick, and full of flavour.

Servings: 3–4
Ingredients
400 g pasta
4 garlic cloves, sliced
400 g spinach
Handful hijiki (rehydrated)
Juice of 1 lemon
Olive oil, salt, pepper
Instructions
Cook pasta al dente.
Fry garlic in oil, add spinach & hijiki.
Add pasta, lemon juice, and pasta water.
Toss until glossy and green.
