Hijiki spaghetti with lemon and spinach

Vegan Pasta Recipe: Hijiki Spaghetti with Lemon & Spinach

Zesty, garlicky pasta with hijiki seaweed and spinach. Fresh, quick, and full of flavour.

Cook time: 15 minutes
Servings: 3–4

Ingredients

  • 400 g pasta

  • 4 garlic cloves, sliced

  • 400 g spinach

  • Handful hijiki (rehydrated)

  • Juice of 1 lemon

  • Olive oil, salt, pepper

Instructions

  1. Cook pasta al dente.

  2. Fry garlic in oil, add spinach & hijiki.

  3. Add pasta, lemon juice, and pasta water.

  4. Toss until glossy and green.
