Easy Vegan Dinner: Kombu Dashi with Ramen & Asparagus

A light, nourishing noodle soup with kombu, asparagus, and spring onions. Comforting yet refreshing.

Cook time: 20 minutes
Servings: 3–4

Ingredients

  • 1.2 L vegetable stock

  • 3 kombu strips

  • 120 g udon noodles

  • A bunch of asparagus

  • 4–6 spring onions

  • Soy sauce, mirin, chili oil

Instructions

  1. Heat stock with kombu (do not boil).

  2. Add noodles, season with soy & mirin.

  3. Grill asparagus, add on top.

  4. Finish with spring onions & chili oil.
