Kombu Dashi with Ramen & Asparagus
Easy Vegan Dinner: Kombu Dashi with Ramen & Asparagus
A light, nourishing noodle soup with kombu, asparagus, and spring onions. Comforting yet refreshing.

Ingredients
1.2 L vegetable stock
3 kombu strips
120 g udon noodles
A bunch of asparagus
4–6 spring onions
Soy sauce, mirin, chili oil
Instructions
Heat stock with kombu (do not boil).
Add noodles, season with soy & mirin.
Grill asparagus, add on top.
Finish with spring onions & chili oil.
