Vegan Risotto Recipe: Wakame Risotto with Peas

A creamy, comforting risotto with lemon, peas, and umami wakame. A festive, plant-based dish for cosy dinners.

Ingredients

  • 200 g arborio rice

  • 150 g peas

  • 30 g dried wakame flakes (ground)

  • 6–8 dl kombu stock

  • 3 shallots, diced

  • 4 garlic cloves, diced

  • 3 lemons

Instructions

  1. Heat stock with kombu.

  2. Fry shallots & garlic, add rice & wakame.

  3. Add stock gradually until creamy.

  4. Stir in peas and lemon juice.
